You probably like it since you're probably a afan of anime, and songs like these can be found in many intros outros. And since it's only japanese singers doing it, it kinda points out that it's not normal or preferable. It's their style, but to the general opinion, it doesn't sound good. Some people can't control it, and most people have vibrato. It takes a long time to control, and some people cant, or won't try to fix it. Its a natural thing

I don't usually say stuff like this... but what a completely moronic thing to say. "hear how a guitar's SUPPOSED to be handled." What kind of narrow-minded and pretentious viewpoint is that? The beauty that lies within an instrument is that it can be played in any way. It can played loud, or soft. Technical, or simple. Slow, or fast. A guitar isn't "supposed" to be played like anything. Just because you can't appreciate guitar playing that isn't flashy, doesn't mean it's any less meaningful.

I think he's just using vibrato, which a lot of singers, regardless of ethnicity, do. I personally like it, but if you don't that's perfectly okay too

Part of the brilliance of this song is how powerful a simple dununun dununun guitar riff can be. As much as I love Dream Theater and Petrucci, he goes way over the top sometimes. Music isn't about being flashy. Imagine if this was drowned in technicality and wankery. It would lose all of the depth and power of the song. Less is more. Between the Buried and me are a good example. Paul Waggoner is a great player but sometimes their music gets so technical that it just kills the song.
