I don't know Morphine well enough to tell you, but he certainly could've. Tuning in 5ths allowed him to play in major or minor keys equally, whereas if he tuned in 3rds, you'd have to choose either major or minor. Its much more versatile. From what I have heard of Morphine (I only own 2 albums), its mostly 5ths.

2 strings, open-tuned in 5ths, so he can essentially play mini chords with the slide on his left hand.

This particular recording is a bit slower than the other recordings, and the recording it self is of low grade and making the bass sound at times out of tune, now mark sandman has an incredibly emotional voice, yet it doesn't come through as much in this recording. The sax could a bit stronger but its still quite nice. I love Morphine, I have the complete discography and most of Treat Her Right, and even though this is a good song, this is not the best recording of this song they did.
