Actually the best thing to do when it comes to reaching for a register, is not strain any of the vocal chords. By stretching his neck like that it puts a lot of restraint on his voice as would tucking his chin in. Im sure he was "looking up" so that he was far enough away from the mic that if his voice cracked it wouldnt be as noticeable. Shoulders back, and chin up is the best way to fully open you're voice. I know this, cause I catch myself doing the same thing as him.

I would say it's because 1-he's not warmed up enough (or his voice is too worn out) and 2-when you record you have as many times to try as you need until you get it perfect, but this is a one take thing.
