Maybe because Extreme Metal is a (almost) totally underground music genre, so band who get in it work on they early material for years before being able (also economically) to release their debut. So you have inspired, young and aggressive music, free of every kind of commercial aim, revisited many times, sperimented on stage before than going on album (maybe firstly promoted with demo tapes, you know). After the first album, it's not the same thing; anyway what you said it's only sometimes true
