to me it sounds like he's saying "La guarda la ribera" instead of just "la guarda ribera" which would make more sense

Not true. Much or American oldtime fiddle music and even some of bluegrass are newer styles of old songs from England and Ireland and other European countries. Songs change as they move to other cultures, style of music and ways of speaking the language, Some singers do historical recreations, and many do not.
