Actually, Jan explained it many times: they were trying to move away from the term grindcore when bands like Meatshits started getting quite a lot of fanzine space back in the day. Agathocles wanted to make clear they are'nt in it with the sexist, pornoholic, gaybashing crowd, so mince core was their preferred term for the politically correct form of the same music.
