Surprisingly, that's what one of my favorite bands does. "In Extremo," a german metal band takes old (like centuries old) songs, and covers them. They use the original language it was written in and some of original instruments. Lately a lot of their work has been more original stuff, but most of the songs on "Weckt die Toten!" and "Verehrt und Angespien" are the traditional ones.
