The French army (excluding the assassins and assuming that the peasants managed to breach the moat) could have held the bridge by positioning their troops in a firing line directly blocking the archway of the entrance. They would have them form up in a tight formation shooting from rank to rank, with the first rank crouching and reloading while the rank behind them fired, then they reload and the rank behind them fired until all ranks had fired. At this point the front rank would stay crouched and fired at will and the act of firing, crouching, reloading would continue from the 2nd rank to the last rank. It would also be best if they had a rank's worth of men on the wall or some other firing position to target any potentially dangerous targets such as the rebel with the rifle that was leading the mob.
