i think the flying just means like, cuz the song is about her having big dreams to leave the small town they live in and go somewhere like new york city or some other place that seems more exciting. he loves her but she wants to leave even though she will miss the town, and him/: because she's lived there forever, that town holds all her memories. so the flying thing, in my opinion is her wanting to leave or "fly" away, and him not wanting to let her go so he's holding on to her
