that is called microphone technique. He knows that on certain notes his voice is actually louder so he will turn slightly to lower the volume and avoid "clipping". Anyone who isnt a trained singer (most rock singers aren't trained) and has really sung loud in to a mic will know this problem. After decades of touring and rehearsals like bryan you will learn perfect mic technique. Watch all his live videos - he does it and many other rock singers do too.
